1. In a graduated bowl measure 125 ml of warm water. Add 1 teaspoon of sugar, dry yeast, mix and leave the mixture for 10-15 minutes or until frothed. Keep in a place away from electricity.

Careful! If you use dry yeast that does not require dissolving in water (Dr. Oetker), you will not have to do this step.

2. In a large bowl put 250 g of flour, add salt and oil.

3. You will notice that the mixture of yeast, water and sugar will make a beautiful foam. Add the wet mixture to the dry mixture in step 2.

Start kneading the dough. When it starts to come off the pot and hand, take it out on the worktop and continue crumbling for a few minutes (2-3). It is not necessary to sprinkle flour on the table. If you use other ingredients, watch if it requires flour on the counter. The dough becomes pleasant and easy to shape.

4. Put it in a bowl and let it grow for about 30 minutes, in a place away from electricity. Cover with foil (previously greased with oil), towel or lid.

5. After this time, take the dough out on the table and cut it into 5 pieces (20 cm in diameter) or 4 if you want them bigger.

6. Form 5 balls and let them rest for 5 minutes.

7. Spread as thin a stick as you can on the table (1.5 mm). I don't sprinkle flour on the counter because it doesn't stick. On a floured countertop it does not adhere being small, it sticks to the twister (even if we floured it too) and they stretch a little harder.

8. Heat well on medium heat a non-stick pan, thicker, preferably cast iron.

9. You can take the sheet directly with your hands, as it is small, it does not break, or you can roll it on a rolling pin and transfer it to the hot pan by rolling it (in this case I think that a part needs to be slightly floured).

10. Bake for about a minute on one side and a minute on the other side. Turn them over with a spatula.

11. Store them in a folded towel, well covered. Consume immediately, warm. Now I made them with skewers.

May it help you!
