The beans are washed and kept in cold water for at least 6 hours or in the evening until morning (hydrated), then change the water and bring to a boil. After a few boils, change again the water that we replace with boiling water and repeat the procedure once or twice more.
When the beans are half cooked, add the carrot, 1 onion and parsley root cut into large pieces and season to taste.
When they are cooked, drain the vegetables, keeping a little soup. Remove the onion and roots and let the beans cool.
Cut the remaining onions into scales and cook in oil. When it has softened, add the broth, salt, pepper and a little thyme. Keep on the fire for another 5 min.
The chopped beans are chopped on the robot together with the cleaned garlic, then we put it in a bowl, we pour a little soup, we mix and then we pour the hardened onion with broth on top.
