Walking up the steps to Eataly's brand-spankin'-new (and yes, long-awaited) rooftop beer garden, Birreria, is a little like that iconic scene in Willy Wonka and the Chocolate Factory. The initial peek into this seemingly elusive world inspires that same kind of pinch-yourself-twice, is-this-really-real moment of amused wonderment and awe.

Except here, in the place of a chocolate waterfall, you find a compact one-room windowed brewery, its shiny new stills glistening and churning from their 14-stories-up perch. Instead of an edible candy playground there is one of a different variety — a sleek open-air patio in the shadow of the Flatiron and Empire State buildings where craft beer geeks will soon set up camp in contented boozy bliss. You half expect the red T-shirt-clad crew to break out into an Oompa-Loompa-like song (in Italian, of course) swinging beer glasses in hand. Kidding.

All jokes aside, the "world of pure imagination" theme does hold true. This is, after all, Italian craft beer we're talking about. Free of the restrictions placed on the country's better known alcoholic beverage — wine — the young upstart world of craft beer has emerged as a platform for creative expression and experimentation. You can find a beer made with the resin of an Ethiopian tree, another crafted using tobacco (not legal in the U.S., sorry).

True to form, Eataly has secured some big names to spearhead the project. The biggest names in the business actually — Birra Baladin's Teo Musso and Birra del Borgo's Leonardo Di Vincenzo — as well as a local star of no insignificant reputation, Dogfish Head Brewery's Sam Calagione. The trio's combined efforts have produced what is sure to be one of the city's must-hit drinking destinations (cue the "Aw man, just when the lines at Eataly were dying down" refrains).

We got a behind-the-scenes tour and taste of Birreria's exciting brews and rustic Italian fare. And it seems, as was the case with the opening of Eataly last September, it will have been more than worth the wait.

Yield: 4-6 servings (depends on hunger levels)

For the Pizza alla Pala dough:

4 cups (500 grams) buratto flour
1 1/2 cups (375 grams) cold water
1 1/2 teaspoons (5 grams) yeast
3/4 tablespoon (12 grams) salt
3/4 tablespoon (10 grams) extra virgin olive oil

*Note: all of these ingredients are available for purchase in our marketplace!

For Pizza Tricolore:
Prosciutto crudo, to taste (we have 5 Prosciutto crudo DOPs at Eataly, like Prosciutto di San Daniele DOP or Prosciutto di Parma DOP!)
Cherry tomatoes, to taste
Arugula, to taste
Stracciatella cheese, to taste

To make the dough:
In a large mixing bowl, mix together flour, cold water, yeast, salt, and olive oil. Knead dough until combined. Shape into a ball, place into a bowl, and cover with a towel. Let the dough rise at room temperature for one hour.

We recommend cooking the pizza on a cast-iron pizza pan or pizza stone. Place the dough ball on a lightly oiled pan and flatten it slightly by pressing down on it with the palms of your hands. Begin pressing into the dough with your fingertips, gently working your fingertips outward and gently pulling the dough with it. Shape the dough into a long rectangle. Cover again and let rise for two to three hours at room temperature.

Drizzle olive oil over the dough, sprinkle lightly with salt, and bake for 20 to 25 minutes.

To assemble the Pizza alla Pala Tricolore:
Quarter the cherry tomatoes for topping the pizza.

Once baking is finished, remove the pizza from the oven, top with fresh ingredients, and serve on its namesake pala, or wooden paddle.

Eataly's Birreria: Brewery and Restaurant in New York

While Italy may bring to mind wine more than anything else, artisanal beer is gaining in popularity.

Birreria is one of the latest hot spots in New York, a rooftop restaurant and brewery opened last summer on the 14th floor of Eataly’s food emporium. Spacious and panoramic, Birreria is perfect for a late evening with friends enjoying good beer - unfiltered, unpasteurized and naturally carbonated Cask Ales - only made 30 feet from the restaurant by brew masters Sam Calagione of Dogfish Head Brewery in Milton, DE , Teo Musso of Birra Baladin in Turin, and Leonardo Di Vincenzo of Birra Del Borgo in Rome.

The menu features traditional Italian flavors, like salumi and formaggi plates perfect for sharing, alongside a selection of Austrian and German dishes, such as homemade Bratwurst sausage and kraut.
Not to be missed this autumn are the mushroom dishes, such as Carpaccio di pleuroti, delicate raw King Oyster mushrooms with hazelnut gremolata and Grana Padano, and the juicy Maitake con pecorino sardo, whole roasted Maitake mushrooms with pecorino sardo cream, asparagus and peas.

This NYC Rooftop Restaurant Is Covered In Flowers And Ready For Instagram

It may still feel like winter outside at the moment, but ready or not spring is on its way. Flowers are blooming, butterflies are swarming, and the sun is setting later each day. And if you're as excited as I am, you're already making a bucket list for when the warmer weather arrives. In addition to planting flowers in your backyard, and stocking up on this year's craziest pool floats, you should probably carve out some time to visit Serra Fiorita, the new NYC restaurant that's basically a floral wonderland.

SERRA by Birreria, the rooftop restaurant at Eataly's Flatiron location, is transformed every season with a new theme, menu and decor&mdashif you had a chance to stop by last winter, you got a taste of the dreamy Serra Alpina scheme. For Spring 2019 Milkyway Studios covered the space in flowers&mdasha mix between real, preserved, and paper&mdashto create the look of a "flowering greenhouse." Mission accomplished. There are pops of pink, fuchsia, yellow and peach hanging from the ceiling and climbing every pillar. Everywhere you look, spring is exploding. Pro tip: make sure your phone is fully charged before you arrive because you're going to want to take at least 50 photos.

So what else can you look forward to besides capturing the perfect picture for Instagram? The spring menu, which is inspired by the Italian countryside, is full of dishes that will having you dreaming about them for weeks to come, like a basil pesto-topped gnocchi, broccoli rabe burrata, and the "celebratory" porchetta . Oh and there's a new Spritz cocktail menu that could put rosé to shame (don't @me). If you're in NYC this month, SERRA by Birreria is taking part of Eataly's Restaurant Fest with a $28 two-course menu, and $25 bottles of spring wines now through March 31st.


Eataly's Cacio e Pepe

Nothing gets quite as simple as cacio e pepe and as the Italians know, the simplest dishes tend to be the most delicious. Cacio e pepe requires only a handful of ingredients -- that you're bound to already have in your kitchen -- so there's no excuse not to make Eataly's recipe for the staple Italian dish.

Recipe Summary

  • 5 dried Anaheim chile peppers, stemmed and seeded
  • 5 guajillo chile peppers, stemmed and seeded
  • water to cover
  • ¼ onion
  • 1 tablespoon mixed spices, or more to taste
  • 1 tablespoon salt, or to taste
  • 3 pounds cubed beef stew meat
  • 6 bay leaves

Place Anaheim and guajillo peppers in a saucepan and cover with water bring to a boil. Reduce heat to medium-low and simmer until tender, about 15 minutes. Remove saucepan from heat and cool for 5 minutes.

Pour chiles and water into a blender add onion, mixed spices, and salt. Blend until sauce is smooth.

Mix stew meat, sauce, and bay leaves in a large pot cook over medium-low heat until meat is very tender, 3 to 5 hours.

Aluminum foil helps keep food moist, ensures it cooks evenly, keeps leftovers fresh, and makes clean-up easy.

Tiramisu is a favourite Italian dessert a perfect balance of sweet mascarpone cream, bitter espresso and a sprinkling of rich cocoa powder.

The tiramisu's invention dates back to the 1960s, in the region of Veneto, Italy, at the restaurant "Le Beccherie" in Treviso. Since, many have tried their hand at recreating the magical transcendence of a well-executed tiramisu.

One of our favourite renditions has to be from Italian grocery store, Eataly .Eataly North America’s Head Pastry Chef Katia Delogu created this classic recipe, which is simple to make and hard to beat.

The ideal dessert for summer days -- when even the thought of turning on the oven makes you hot -- this no-bake Italian delicacy is your go-to after dinner treat.

Serra Alpina by Birreria at Eataly Just Transformed Into a Winter Wonderland for The Holidays

The major Italian food emporium, Eataly, offers more than just fresh pasta and unbelievable gelato (and prosciutto, and panini, and olive oils. you get the picture). In its New York City iteration, it also boasts a rooftop restaurant famous for its over-the-top seasonal decor&mdashand it has just officially decked the halls for the holidays.

Serra by Birreria made headlines this spring when the entire restaurant was covered in colorful flowers. Now, the design team from Milkyway Studios has pulled off another gorgeous transformation. The decor, which is entirely handmade, is primarily made of flocked branches with pine and lights. Inspired by a cozy cabin, the space is designed to feel like a wonderland of trees and snowflakes. The installation took four over-night sessions to complete.

With the new look comes a new seasonal menu that focuses on truffles, winter squash, and celery root, with dishes like a braised osso buco for two, and Italian-style fondue of Fontina d'Aosta. And, now through November 17th, Serra Alpina is offering special two-course prix-fixe menus for lunch and dinner as part of Eataly's Restaurant Fest. Now is definitely the time to visit, but make sure to make a reservation ahead of time&mdashthis rooftop is one of the hottest spots in the city come the holiday season.

Okay, so let&rsquos all try to get together and accept the fact that there was a bad brewpub fad in the &rsquo90s when it seemed that every Podunk town had a bar that brewed beer. It soon became obvious that the beers at the average brewpub were amateurish (and their standard pub fare was nothing to write home about, either). Like dinner theater or singing waiters, it seemed that those &rsquo90s-era brewery + restaurants took on two disparate tasks and managed to excel at neither one.

Cue the magical Sam Calagione of the fabled Dogfish Head Brewery, who, in 2011, teamed up with Mario Batali and Joe Bastianich, as well as other brewers, for Eataly&rsquos Birreria. Finally, the restaurant world would see a top-tier brewing team paired with equally elite restaurateurs. The fans went wild at Birreria, the cask-conditioned ales (hand-pumped from wooden barrels) were a beautiful complement to Birreria&rsquos rustic, house-made salumi imported cheeses and excellent grilled sausages, meats, and fish. Birreria&rsquos Manhattan rooftop biergarten doesn&rsquot hurt the enterprise, either.

Taking a page from Eataly&rsquos Birreria, Peekskill Brewery made some big moves in 2012&mdashnot the least of which was decamping from its tight 55 Hudson Avenue digs. PB now occupies the glorious, four-story former furniture warehouse at 47-53 South Water Street. Not only does the new space afford room for more beer production, it also offers room for growth. Look for the Tap Room on the first floor and the slightly more formal Pub on the second floor. The owners have toyed with the idea of a future third floor public-arts space, a fourth-floor banquet hall, and, like Birreria, a rooftop biergarten with views of the Hudson River. But the biggest move occurred just before PB relocated. In the fall of 2011, PB&rsquos owners, Morgan and Keith Berardi, lured Jeff O&rsquoNeil, Ithaca Brewing Co.&rsquos star brewer, to take over their tanks. Since then, Peekskill Brewery has gone from a small-town brewpub to a serious brewery with beers on tap across Westchester and in New York City.

But what about the restaurant? Perhaps the comparison to Birreria is unfair Chef Sean Corcoran&rsquos menu&mdashby demographic necessity&mdashmust cast a wider net than Manhattan&rsquos Birreria (which benefits from population density). In PB&rsquos starters, you&rsquoll find perfunctory pub grub like blah deviled eggs and chicken wings joining several better, more carefully crafted dishes. These include elegant miniature jars of chicken-liver parfait served with onion jam. Also good, fat slices of brawny pork terrine with bacon, pistachios, and whole-grain mustard (we also loved the oniony house-made pickles&mdashthe crunchy cauliflower is wonderful). Though skinny and rather blonde, our two soft pretzels with caraway béchamel were snapped up quickly.

At PB, the beer is a main draw, so it&rsquos wise to nominate a designated driver. O&rsquoNeil is known for his sour beers, a style intentionally infected with specific strains of yeast that produce a mineral tartness that pairs well with rich foods. Peekskill&rsquos Simple Sour and Amazeballs are good choices for the start of a meal, though we could have wished for more guidance here. One of my guests ordered an impenetrably black Common Ground (cold-steeped with ground coffee beans) that was delicious in its way, but was too titanic for the beginning of a meal&mdashthis is a dessert brew. Also look for a short wine list, an on-trend spirits list, and great cocktails. Of these, we loved the Pickleback&mdashC.R.E.A.M. Ale, house-made pickle juice, and The Irishman whiskey.

On each visit, we couldn&rsquot help but think that PB&rsquos kitchen focuses on its starters and snacks at the expense of its mains. A striving main of pan-seared duck breast with farro, coriander, roasted carrot, duck confit, and mostarda was disappointingly spun toward the gloopy and sweet end of the spectrum. Worse, we encountered a dish of rubbery, overcooked mussels in which a solid third remained unopened. Fish and chips, part of the more standard pub fare, was marred by sodden and floppy fries, though its milky fish was delicious beyond a shattering beer-batter crust.

While the second-floor dining room is spare and modern (and offers glimpses into an open kitchen, and, if you&rsquore lucky, sunset river views), a middle section open to the first-floor bar carries loud chatter and the blue glow of TVs into the room. If noise is a concern, request a table located away from the central, open space.

After mains, shareable plates of locally made cheese from Murray&rsquos make an excellent segue while, inevitably, you&rsquore still nursing a beer. To end, homey cookies with a shot of spiced milk are the perfect sendoff. After this (and all those beers), you&rsquoll sleep like a baby.

One of the most exciting things about Mario Batali and Joe Bastianich’s gastronomic amusement park Eataly was the promise of La Birreria, a rooftop Italian-style beer garden with food by Batali and exclusive beers by a trio of cult beer giants𠅍ogfish Head’s Sam Calagione and the pioneers of Italy’s up-and-coming beer scene: Teo Musso of Birra Baladin in Turin, and Leonardo Di Vincenzo of Birra del Borgo in Rome.

But more than six months after Eataly opened, the project is still MIA. Not for long! The trio previewed the long-awaited Italo-pub this week with a tasting of their beers and some of the dishes Batali is prepping for the menu. Here are five reasons we’re counting the days until the May opening:

1. Year-Round Drinking: The space was close to ready last fall, Calagione told us, but then Batali and Bastianich decided to “make a $2 million dollar bet on it,” by putting in a retractable roof, so there will be four-season eating and swilling. Bonus: There’s a great view of the Empire State Building from up there.
2. Kegs Straight from the Old Country: Italy is producing some of the most interesting beer in the world, but it can be tough to find𠅎specially on tap. (Even in Italy, it’s not so huge: “Maybe next year we will reach 0.2 percent of the market,” joked Birra del Borgo founder, Di Vincenzo.) Eataly will have a ton of Italian brews by the glass probably three in casks and at least six in regular kegs (Dogfish’s beers will be mixed in as well). It’s a chance to taste ultra-rare stuff like the caramelly, creamy Super Baladin or Birra del Borgo’s grassy Genziana, brewed with a bitter herb usually used in making amaro instead of hops.
3. Exclusive Brews: Meet NYC’s newest beer star𠅋rooks Carretta, a 28-year-old bearded Italian dude from Birra del Borgo who just moved to town to be Eataly’s in-house beermaker. He’ll be making beers on the roof, like a version of Dogfish Head’s 75-minute IPA infused with thyme. He’s so new in town that he wasn’t quite sure of the name of the Brooklyn street he lives on.
4. Batali Does Bar Food: A quick run through the menu had some early standouts: tempura-style mushrooms, a mustardy potato salad peppered with crispy guanciale, and an evil-looking dark blood sausage humming with cinnamon. (It’s an especially nice match with Birra del Borgo’s 25 Dodici, a spiced winter ale.)
5. They’ll Take Reservations: For parties of six or more, you can get your own picnic table. Thanks, Mario!
