Great intimate French restaurant. The decor is beautiful, you'll spend a good portion of your meal looking at all the vintage french posters adorned on the walls. In the background you'll hear the sounds of Edith Piaf and Monique Serf, a nice touch that makes you fell as if you are in an old Parisian bistro. It wouldn't be French cuisine without an appetizer of escargot. They are served in a traditional garlic parsley butter and simply melt in your mouth. My favorite dish the the Canard Roti. The chef roasts the duck to perfection and it is served with a delicious grand marnier sauce and wild rice. The selection of souffles is to die for. These must be ordered when you order your entree so I advise you order and leave room for dessert - you won't regret it. My recommendation is the praline souffle.


New Orlean's Style Pralines. one of my favorites! I was born and raised in Louisiana and this has always been one of my favorite candies! Now, I must tell you: they are VERY sweet and rich! I hope you love them as much as I do! Enjoy :)

I think I over cooked because mine came out like sugar sand. Can you confirm that?

Mine also grainy and I cooked the three minutes. Husband still loved them. He’s from KY and said this is how they’re supposed to be. But I have made other recipes and they are creamier. But had a hard time getting those to set up.

There are two types of pralines. I love the creamy kind.

Are you able to double this recipe or just make single batches?

I grea up in NO and sold pralines to make extra money, lol. I have not yet found success with a recipe that does not call for either a soft ball test or a soft-ball reading on a candy thermometer. This is a traditional listing of ingredients, though, so check other praline recipes for doneness tests and good luck! (You can use the doneness tests from old-fashioned fudge, btw. If that is kind of scary - it can be intimidating till you've made a bunch of batches and get a 'feel' for it - try other praline recipes that are more forgiving. Google 'easy' or 'never-fail' pralines. HTH!

The 'boil for x minutes' recipes leave a lot of room for variation that a candy thermometer or soft ball test does not. Check Youtube videos to check soft ball tests to get more comfortable with using that method. Good luck!

I made this for the second time this weekend, and it was just as delicious as I remembered. This takes some effort in the morning to get everything ready to go into the crockpot. but then at dinnertime you just have to serve it up! We used the wheat egg noodles to feel a bit healthier, and it was delicious. I also didn't make the "garnish" for this dish. it's up to you. Please try it, and save me a bite!

Beef Burgundy

Make sure to use the low setting on your slow cooker the stew will burn on the high setting. Serve with boiled potatoes (the traditional accompaniment), mashed potatoes, or buttered egg noodles.

Serves 6 to 8
8 ounces bacon , chopped
4 pounds beef stew meat (preferably chuck)
Table salt and ground black pepper
1 large onion , chopped fine
2 carrots , peeled and chopped fine
8 garlic cloves, minced
2 teaspoons chopped fresh thyme leaves
4 tablespoons tomato paste
2 1/2 cups Pinot Noir
1 1/2 cups low-sodium chicken broth
1/3 cup soy sauce
3 bay leaves
3 tablespoons Minute Tapioca
3 tablespoons minced fresh parsley leaves

1. Cook bacon in large skillet over medium-high heat until crisp. Using slotted spoon, transfer bacon to paper towel-lined plate and refrigerate. Pour half of bacon fat into small bowl set skillet with remaining bacon fat aside.

2. Dry beef thoroughly with paper towels. Season beef with salt and pepper place half of beef in slow cooker insert. Heat skillet containing remaining bacon fat over medium-high heat until just smoking. Cook remaining beef in single layer until deep brown on all sides, about 8 minutes. Transfer browned beef to slow cooker insert.

3. Add reserved bacon fat to now-empty skillet and heat over medium-high heat until shimmering. Add onion, carrots, and 1/4 teaspoon salt and cook until vegetables begin to brown, about 5 minutes. Add garlic and thyme and cook until fragrant, about 30 seconds. Add tomato paste and stir until beginning to brown, about 45 seconds. Transfer mixture to slow cooker insert.

4. Return now-empty skillet to high heat and add 1 1/2 cups wine, chicken broth, and soy sauce. Simmer, scraping up brown bits, until pan bottom is clean, about 1 minute. Transfer wine mixture to slow cooker insert.

5. Stir bay leaves and tapioca into slow cooker insert. Set slow cooker on low, cover, and cook until meat is fork-tender, about 9 hours.

6. When ready to serve, discard bay leaves and stir in reserved bacon. Bring remaining 1 cup wine to boil in large skillet over high heat and simmer until reduced by half, about 5 minutes. Stir reduced wine and parsley into stew and adjust seasonings. Serve.

Make Ahead: The recipe can be prepared through step 4 up to 2 days in advance. Refrigerate the bacon, browned beef, raw beef, vegetable mixture, and wine mixture separately. When ready to cook the stew, transfer these ingredients (except bacon) to the slow cooker and proceed with step 5.

The Final Touch In addition to the rich flavor of the wine, many people consider a garnish of sautéed onions and mushrooms one of the hallmarks of a great beef Burgundy. We think this little bit of last-minute kitchen work is worth the effort.

Instructions for the Garnish: Before reducing wine in step 6, bring 2 cups frozen pearl onions, 5 tablespoons unsalted butter, 1 tablespoon sugar, and 1/2 cup water to boil in large skillet over high heat. Cover and simmer over medium-low heat until onions are tender, about 5 minutes. Uncover, increase heat to high, and cook until liquid evaporates, about 3 minutes. Add 10 ounces white mushrooms, quartered, and 1/4 teaspoon salt and cook until vegetables are browned and glazed, about 5 minutes. Stir onions and mushrooms into stew and proceed to reduce wine in now-empty skillet as directed in step 6.

My principle food rule is: eat foods I love that love me back. The “foods I love” part is pretty clear. I want my meals to be delicious.

“Love me back” is a little more nuanced. People ask me what that means all the time. A food that loves me back

  • Supports my health & body composition goals
  • Keeps my energy levels high
  • Satisfies my hunger
  • Doesn’t trigger cravings
  • Doesn’t make me feel bloated
  • Doesn’t make my skin break out
  • Makes me glad I ate it (as opposed to wishing I hadn’t)

The foods I love that love me back probably won’t be the same as the foods you love that love you back but I absolutely want to help you find those things for YOU! Finding that sweet spot of foods you love that also love you back is a huge key to mastering fat loss naturally.

A couple weeks ago I shared one of my favorite recipes on the podcast & a few times on Instagram and I have heard from at least a dozen people this week that they’re obsessed with it!

It’s my staple brunch: raw shredded cabbage with bacon, eggs & avocado. Sometimes I add walnuts. Oftentimes I add Primal Kitchen Chipotle Lime Mayo.

If you can’t stomach the idea of veggies, especially raw ones, for breakfast, that’s totally cool. You could easily have this for lunch or dinner. However, check out what people are saying (below) about having this earlier in the day. They’re shocked by how much they love it & it’s keeping them full for hours.

One of the things I love most about this meal is how it’s the perfect combination of crunchy, salty & creamy. But that’s not all:

  • It’s fast to make
  • It only requires 1 pan
  • It’s very inexpensive
  • It keeps me full for hours
  • It contains bacon (bonus points, right?)

Here’s what you’re going to need:

  • 2-4 cups raw, shredded cabbage (I prefer a mix of red & green but pick what you love most)
  • 2 slices bacon
  • 2 eggs (yes, I know the pic below has 3 eggs. I was making a double)
  • 1/4 – 1/2 ripe avocado
  • Salt
  • (nuts and PK Chipotle Lime Mayo are optional)

  1. Put your shredded cabbage in a bowl.
  2. Cook your bacon in a skillet until it’s nice & crispy.
  3. Remove the bacon but keep the skillet on heat.
  4. Add your two eggs to the skillet and cook them over easy – over medium.
  5. Combine your shredded cabbage, cooked bacon, avocado and eggs in a large bowl.
  6. Sprinkle with salt to taste.

I use my Oxo Salad chopper to then mix it all together, chopping up the bacon, avocado & eggs with the cabbage. You could certainly use a standard pizza cutter to do this or you could enjoy it without mixing it up.

I love mixing it together because you get the creamy avocado & egg yolk acting like a sauce with the cabbage and bacon & crunchy and a little salty.

Here are the most common questions I get about this dish:

How do you chop your cabbage?
The cheapest way to do this is to buy a head of your favorite cabbage & shred it in the food processor. Here’s what I do most often: I’ll buy 2 heads of cabbage, one red & one green, and cut them into quarters. I’ll pulse 1 quarter at a time in the food processor and keep it in tupperware. This gives me plenty of shredded cabbage for many meals. I personally like the blend of red & green and I’ll often throw in a carrot, though it doesn’t change the flavor of the dish at all. Just adds more color.

Alternatively, you can buy pre-shredded cabbage. Whole Foods often has pre-shredded red & green cabbage. You could buy a cole-slaw mix and not use the dressing, but that is often far more fine than doing it yourself and, in my opinion, that detracts from the texture.

Of course you can also do it with a knife.

Do I have to eat that much cabbage?
Of course not. How much you eat is relative to your entire day, your activity level and if you snack. I choose not to snack very often. I don’t like to have to make food choices all day long, so I eat 2 or 3 bigger meals. Eat until you’re satisfied. Do what works for you.

Cabbage is hard on my stomach. Could I use a different vegetable?
Absolutely. You could certainly use mixed greens. Leafy greens like spinach, arugula and lettuce will be lighter, less voluminous and not as rich in fiber. They’re also not crunchy, so you would lose that element, but the most important thing is that you’re eating foods you love that love you back. This will look different for everyone. Do what works for you.

By nature, I am no cook and have a wicked sweet tooth. When I first read up on Whole30 (based on the book The Whole 30: The 30 Day Guide to Total Health and Food Freedom) , I thought, “No sweets? No sugar in my coffee. All this cooking and food prep. Heck, no!”

However, the evidence was pretty compelling, and the benefits seemed too good to be true. I was willing to give it a try. Well, can I just tell you? My experience with Whole30 was genuinely life-changing. I’m not exaggerating. Any apprehensions I had about feeling deprived or eating ‘less-than-tasty’ food was soon alleviated. (You can read my entire Whole30 Review here: Part 1: An Overview, The Good, The Bad and Ultimate Guide of Best Tips and Tricks for a Successful Whole30).

There are so many benefits to Whole30, but one of my favorite things about Whole30 is how good the food is. The meals are so, so good. Like I said, I’m not a cook, and my abilities in the kitchen are passable at best. But when I started cooking Whole30, my husband complimented my cooking WAY more than he ever had.

Just about every time we ate a meal, we would look at each other, raise our eyebrows in something of disbelief, and gush a bit about how good this food was. So good, in fact, that I never went back. Seven months later, I’m still cooking Whole30 (and have a happy husband as a result!). While we aren’t 100% compliant, about 6 out of 7 dinners a week are Whole30.

Preparation and Planning – Key for Success on Whole30

While I was on Whole30, I created menus from recipes on Pinterest (here’s how I use Pinterest to meal-plan) . I spent a lot of time gathering and testing out recipes. My husband has a super-picky palette, by the way (lucky me). Well, I went through 7+ months of my menus and picked out my 30 favorite Whole30 recipes. These are the ones we’ve made several times, and we give them an enthusiastic 𔄚 Thumbs Up.”

You’ll notice that several of them come from the same source. That’s intentional. These sites are my favorites and my go-to bloggers for Whole30 recipes. These food bloggers are ah-mazing! Tips for Using These Dinner Recipes

A few things you need to know about these recipes. Most of the recipes are Whole 30 compliant. Some are listed as ‘paleo’ which is close to Whole 30, but not exactly the same thing. Just be sure to double-check any ingredients against the Whole 30 compliant list (Here’s the shopping list of what you CAN have Here’s list of non-compliant additives .).

If a recipe had non-compliant ingredients, I would either find a compliant substitute or just leave it out altogether. I personally didn’t think it hindered the taste one bit.

My Favorite Whole30 Hack

When you’re doing Whole30 (or just life in general), things don’t always go as planned. What has been a huge help for me is my an Instant Pot In a bind, I don’t always have time to plan out a complex meal, but a quick Instant Pot meal can save the day. There are a TON of Instant Pot Whole30 compliant dinners on Pinterest. If you don’t have an Instant Pot, I highly recommend. It can truly come to the rescue.

I also purchased the Air Fryer lid for my Instant Pot, and I just love it. When you’re craving those crispy foods, you can still have them and keep it healthy. To be honest, I use my Air Fryer more than my Instant Pot, but I adore them both.

Other Whole30 Recipes You’ll Love

To be a success on Whole30, it takes a lot of planning and prep, and a lot of delicious options. But whole, real food is so good, you just gotta be a little proactive. Both recipes are from the It Doesn’t Taste Like Chicken blog: chocolate cupcakes and vanilla frosting.

These are for my neighbors. We sometimes have Covid-safe potlucks where we each eat on our back stoops or balconies.

I'm not trying to be rude or a downer here, just spreading awareness. I'm allergic to nut milks and tons of other lovely tasty vegan ingredients (latex food allergy). I always ask what's in things before eating or only eat my own food, but other people tend to eat foods they think are safe based on previous experience. I learned the hard way from eating others' cooking. In this example I would assume I could eat a non vegan cupcake (vegetarian here) but definitely not this recipe of vegan cupcake. Again I'm not trying to jump on you, just saying you could actually save someone from getting really ill if you know their allergies or are more open about what's in it. I always tell people I make food for of it has an "unusual", veggie, vegan, or substituted recipe for this reason. I'm assuming you know your neighbours well enough to avoid this anyway. When I started this little blog I use to a post about some of my favorite things to use in my kitchen.

Those pictures were pretty horrid (like this one and this one--oh man!) but hey at least we can say that the photography has come a long ways, right.

But the tools you use in your kitchen are very important. And because I cook a lot I get quite picky with what I use.

It's like any job, the kitchen tools you use can make the job much easier when you are in your kitchen.

A salad spinner is totally one of them. As we say in our house, they are things that "we want and things that we need". A salad spinner fit in the category of wanting but man have I been wanting one of those babies for several years now.

Mostly because we tend to eat a lot of salad at our house and I love the way it makes the lettuce so much crispier and crunchy. One of my daughters LOVES salad so it's on the table at least 4-5 times a week. Because of that I am always rinsing the lettuce and using at least 4 paper towels each time I do, to get all the water off the lettuce. The dressing sticks so much better when all that water is off.


Quick Veggie Bacon Scramble

(15 min total prep/cook time, feeds one hungry person)

Ingredients

  • 2 Jumbo Pasture-Raised Eggs
  • 1 Tbs Organic Coconut Oil
  • 2 Slices Organic Bacon
  • 3/4 C Sliced Shiitake Mushrooms
  • 1 C. Chopped Organic Kale
  • 1/3 C Diced Organic Jicama
  • 1 Pinch Sea Salt

Instructions

  1. Put bacon in toaster oven, oven, or in a pan on medium heat to cook for about 10 min while everything else is being prepped/cooked.
  2. Place large sauté pan on medium heat (medium-low with a non non-stick pan) with 1 tbs coconut oil in it.
  3. Chop or dice kale, mushrooms, jicama on large cutting board. (Do not make them perfect. You’re racing to get these things chopped before the oil in the pan burns.) Line ’em up on the board and toss them in with the now hot oil in pan. Spread the veggies out and cover pan for about 3 min.
  4. Keep stirring them until they’re softer but still colorful (about 3 more minutes). Add pinch of salt.
  5. Add eggs – just crack them into the pan. Break yolks with your spatula and mix them up with veggies evenly. Let it all cook for about 1 minute. Stir for about 2 – 3 more minutes until everything is evenly cooked (eggs should no longer be runny). Take out your bacon, cut it up and add to the egg mixture.

This breakfast recipe is packed with protein (about 19gm), good fats (eggs, coconut oil & organic meat fats) and complex carbs (veggies). You could add a few blueberries or other fruit for that little bit of sweet we all love in the morning. If you’re not a coconut oil fan, substitute with olive oil.
