You can replace the oil with butter and let it cool down a bit. Then it will be stiffer when you decorate (especially at festive meals). I preferred the light version!

I start the series of recipes published on the blog with this delicious dessert, easy to make and very refreshing, suitable for hot days, especially if you do not love ice cream (which is not impossible, I know a few people).

The dessert is mounted both in a large cup or bowl (perfect for parties) and in small glasses, individual portions.

It's a cold-prepared dessert from what we have around the house. Combinations can vary depending on your favorite fruit or cream. As I had an egg white cake, with lemon and poppy seeds, which was not eaten, I thought of finding a utility for it and I used it as a starting point for this recipe. Of course you don't need to make a cake for this recipe, you can use any leftover countertop or simply biscuits bought.

I also had a jar of Greek yogurt lying in the fridge and I said it was refreshing and light, an alternative for those who don't like ice cream.

For the base you need a vanilla top / cake or 20 biscuits. Prepare a syrup of 250 ml of water, 120 g of sugar and vanilla essence and let it cool.

The beauty of these cookies lies in the fact that you can make them in any size and you can fill them with any jam or cream you want.

Bake the biscuits for 12-14 minutes until golden brown and put them to cool on a grill. Fill each hole with your favorite jam or lemon curd.
