  • 250g butter, softened
  • 100g dark brown soft sugar
  • 2 eggs, separated
  • 1 1/2 teaspoons vanilla extract
  • 275g plain flour
  • 175g pecans or walnuts, finely chopped
  • Decoration
  • 1 bar plain chocolate (or white chocolate)
  • 1 large bag candy covered mini chocolate eggs

MethodPrep:30min ›Cook:12min ›Extra time:3min › Ready in:45min

  1. Preheat the oven to 180 C / Gas mark 4. In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the egg yolks then stir in the vanilla. Stir in the flour and mix well.
  2. In a shallow dish, such as a pie plate, beat egg whites until foamy. Spread walnuts on a plate or greaseproof paper.
  3. Roll 1 tablespoon of the biscuit dough into a ball; roll in egg whites then in walnuts. Place 5cm apart on a baking tray. Make a depression in each ball with your thumb.
  4. Bake in the preheated oven for 12 to 15 minutes.
  5. When the biscuits have cooled, melt the chocolate in the microwave. Spoon just a bit of the melted chocolate in the hollows of the biscuits, then place 2 to 3 mini eggs (depending on their size) into the hollows. Allow to cool long enough so that the chocolate hardens and the eggs are secure in the nests.

Used different ingredients.I ran out of wall-nuts when my biscuits were quite on the way. So making the second batch I also added some sesame seeds to the nuts . Ended up looking and tasting pretty good too...-15 Apr 2009

  • 30-60 Nestle NestEggs candies, any flavor

Hash Brown Egg Nests Recipe

Ingredients

Frozen shredded hash browns, thawed
Sharp cheddar cheese, shredded
Olive oil
Medium eggs
Salt and pepper to taste
Cooked bacon, crumbled
Parsley, chopped

Instructions

Before you begin, the first step in making these Hash Brown Egg Nests is to thaw the frozen, shredded hash browns. However, I find this easiest if making them in the morning to set the frozen bag of hash browns in your refrigerator the night before.

Then open the bag and let them finish thawing as you make your coffee.

Once the hash browns are thawed add them to a large bowl along with the cheddar cheese, olive oil and salt and pepper to taste.

You can use your fingers to form the nests or use a mini tart tamper to help.

Next, grease the muffin pan and divide hash brown mixture evenly between each cup. The loosely packed potatoes should fill each cup.

Then use your fingers to pack them tightly and shape them into nests, being sure to push them up the sides of the cups. The key here is to pack them tightly.

Pre-Bake The Hash Browns

Bake the hash brown nests in a preheated oven for 15 minutes. The potatoes will begin to brown, especially around the top edges.

Once the bake time is up, remove the pan from the oven and decrease the oven temperature. Using a greased back of a spoon or a mini tart shaper lightly make an indention in each hash brown cup.

Then crack a medium egg into each muffin cup on top of the hash browns. Season with additional salt and pepper to taste.

Now sprinkle crumbled bacon and cheese on top of each egg. Place the pan back into the oven and bake until the egg whites are cooked.

Depending on how well done you would like the yolk, bake for 13-20 minutes. We prefer the egg hard boiled and they were perfectly cooked in 20 minutes in our oven.

However, if you want your Hash Brown Egg Nests to have a runny yolk, remove the pan as soon as the egg whites are set. Of course, increase the time for over medium eggs.

Once you remove the pan from the oven garnish the tops with parsley. Let the egg nests rest for a couple of minutes before you remove them so they have a chance to set.

Then gently slide a knife along the edges of each muffin cup and use a fork to lift them out of the pan.

Enjoy immediately or let cool and store in the refrigerator. To reheat, place the egg nests in the microwave for 20-30 seconds.

These cute Mini Egg Rice Krispie Nests are a fun no-bake Easter dessert kids will love helping to make! (A cute follow-up to our kid-made Easter creme egg cake!)

I first shared this Rice Krispie Nests on my friend’s blog, Amanda’s Cookin’.

Pinterest abounds with jaw-dropping, enticing Easter desserts – but very few of them are easy for kids to make. (Which is funny because who loves holidays more than kids?)

My daughter and daycare kids get so excited when I tell them that we’re going to “bake something” – they love the feeling of accomplishment after making something delicious that they can share, not to mention the opportunity to sneak tastes as we create.

Kids know when they actually are the creators of a dessert versus when they are being patronized – cracking an egg into some batter and then seeing an unrecognizable dessert hours later, so it’s important to me that we pick recipes that they can make from start to finish with very few times that I need to step in beyond providing some gentle direction.

These Mini Egg Easter Nests made with “nests” of Rice Krispies treats and topped with that most addictive of Easter chocolates – Mini Eggs!

After learning about robin’s eggs my kids were obsessed with the pretty “freckles” and their similarity to the mini chocolate eggs so I knew they’d go crazy for any dessert idea using them.

Rice Krispies are quick and easy for kids to help make – I let my daughter (5 years old at the time) help melt the marshmallows in the microwave, while our younger daycare kids helped measure the cereal, count out the marshmallows and form the Rice Krispie nests.

I had the kids wet their hands in a small bowl of water to help prevent the Rice Krispie mixture from sticking to their hands as they formed the nests, but coating hands with a bit of butter or oil will also work.

You can prep these Easter treats up to a week ahead of time and store in an airtight container. They make the perfect Easter treat for kids to make for friends, bring for classroom contribution, or serve as a light Easter dessert. I personally think they look gorgeous as an Easter centrepiece, and how proud would the kids be to see their creations in the centre of a beautifully set table?

Ingredients to Make Rice Krispie Nests

  • 4 cups marshmallows
  • 5 cups rice cereal
  • 1/4 cup coconut oil
  • 2 teaspoons vanilla
  • 2 cups mini eggs
  • 1/2 cup chocolate chips, optional

Kitchen Tools You May Need

  • Large microwave-safe bowl
  • Spatula
  • Measuring cups and spoons
  • Muffin pan

How to Make Easter Rice Krispie Nests

Grease a 12-cup muffin tray and set aside.

Place the marshmallows in a large microwave-safe bowl and heat for 25-30 seconds. Stir well, and repeat heating as needed.

Add the melted coconut oil and vanilla extract to the marshmallows and stir well to incorporate.


Add the rice cereal cup at a time, gently folding it into the marshmallow mixture, until all of the cereal is incorporated.

Scoop heaping 1/4 cup portions of the rice krispie treats into the prepared muffin tray.

Wet your hands and press the rice krispies into a cup or tart-shape.

Place in the fridge for 2 hours or overnight to set.

When the nests have had a chance to set and harden, pop them out of the muffin tray using a butter knife and fill with treats. We used mini eggs but jellybeans or a some berries would also be delicious.

You can either just set the mini eggs in the nests, or add a half Tablespoon of melted chocolate chips to each and then add the mini eggs so that when the chocolate sets and hardens it holds the eggs in place.

How to Make Chocolate Easter Nests

Our triple-tested recipe has a shocker secret ingredient.

And that secret ingredient would be . chow mein noodles, transformed into tasty perches for candy-coated chocolate eggs or your favorite jelly beans!

Total: 25 minutes plus chilling

  • 12 oz. chocolate chips
  • 3/4 c. smooth peanut (or other nut) butter
  • 5 c. chow mein noodles
  • 10 oz. candy-coated chocolate eggs
  • 5 c. shredded coconut
  • Green food coloring

1. Line large rimmed baking sheet with waxed paper. In 4-quart saucepan, melt chocolate chips and nut butter on low, stirring constantly, about 5 minutes.

2. Place chow mein noodles in large bowl. Pour chocolate mixture over noodles stir well to coat.

3. Onto prepared sheet, drop 2 tablespoons mixture to form mound repeat with remaining mixture. Shape into nests. Refrigerate until set, about 30 minutes.

4. While nests set, create edible grass by thoroughly mixing a few drops of green food coloring with shredded coconut.

5. To serve, fill nests with chocolate eggs and place on coconut "grass." Makes 24 nests.

Nutrition Facts (each nest, without the eggs or coconut): About 170 cals, 4 g protein, 18 g carbs, 10 g fat (4 g sat), 2 g fiber, 135 mg sodium.
