Potato stew is one of my favorite foods since childhood. Then my mother often prepared it for us, now it is present on our table more on fasting days, but I still like it just as much. If I have a pickled cucumber next to it or a tomato salad in the summer, I eat a full bowl, without breathing. Yes, I was not raised with fit and expensive dishes, more with what I brought from the country, and these simple dishes remained in my soul.

  • 7-8 large potatoes
  • 1 onion
  • 1 carrot
  • 1/2 ardei kapia
  • 200 gr peeled tomatoes
  • 1/2 green dill tie
  • 3 tablespoons oil
  • 1 tablespoon full of tomato paste
  • salt
  • pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried basil (this is extra, only if you like)

Servings: 4

Preparation time: less than 90 minutes

Peel the potatoes, cut them into about 8 pieces each, if they are bigger.

Peel an onion, finely chop it, peel the carrot, cut it in half lengthwise and then slice it.

We cut the kapia pepper into cubes, as well as the peeled tomatoes.

Heat the oil in a saucepan.

Put the onion, carrot, kapia and simmer for about 2-3 minutes.

Add the potatoes, mix them well with the vegetables, then pour enough water to cover them.

Sprinkle with salt, pepper and paprika.

Let it boil at the right heat.

When the potatoes are about half done, add the finely chopped basil and green dill. Also now we add the peeled tomatoes.

Let it boil well, decrease it according to how we like it (with more juice, thicker, this is everyone's choice), and at the end we incorporate the tomato paste and leave it on the fire for a maximum of 2 minutes.

We draw the pan of fire, let it cool a little.

Serve with pickles, vegetable salad!
